Tomato Soup + Chickpeas

Meal Planning

Lunch recipe: Tomato soup + chickpeas & bread

Ingredients (serves 2)

  • Handful of cherry tomatoes

  • Red pepper

  • 2 cloves of garlic

  • 1 can of roasted and chopped tomatoes

  • 1 can of chickpeas

  • 1 tbsp of greek yogurt or sour cream

  • Fresh or dry basil

  • 2 slices of sourdough

Directions

Bake tomatoes, garlic + pepper. Blend with canned tomatoes/tomato soup. Add seasoning + heat it back up. Done!
