Dinner Recipe: Fish Tray Bake

This is my ultimate lazy but “fancy” dinner mid-week. You preheat the oven, chop all the ingredients and once it is in the oven, you can shower, put on your favorite show and pour yourself sparkling water (or glass of wine). Your dinner will be ready without having to stand in the kitchen. Plus minimal washing up if you use parchment paper.

Ingredients

  • 2 medium potatoes or 12 baby potatoes

  • Everything but bagel seasoning

  • 1 package of brussel sprouts

  • 2 fillets of salmon

  • TJ’s Salmon seasoning

  • 1 tsp olive oil

Directions

Preheat the oven to 390F (200C).

Cut potatoes into bite-sized pieces. Pour the potatoes on a parchment paper-lined baking sheet, drizzle with olive oil, and sprinkle with s&p and everything but bagel seasoning (or your favorite seasoning). Place it into the oven.

Steam brussels sprouts (I use the microwave, but you could use a steamer). Slice them into 2.

After 20min of the potatoes cooking, add the Brussel sprouts, and fish onto the same baking sheet or a different dish if you prefer. Drizzle both with a little olive oil and add s+p onto both.

When you remove the baking sheet, add lemon/lime or fresh herbs, or a spicy sauce + enjoy!
